‘med.’ - modern Mediterranean small plates restaurant opens in Brighton

New modern Mediterranean small plates restaurant, med. opened in Brighton yesterday (30th July 30th).

med. has 30 covers and is based in Little East Street, in Brighton’s historic Lanes.

The two chefs behind med. are former owners of the street-food inspired franchise, Wolfsmouth, Will Dennard and Jack Southan, who were also co-owners of Paradiso Social which finished in the top 20 of Brighton’s Best Restaurant Awards 2020.

med.’s small plates menu is inspired by food from the Mediterranean coastline, "garnished with a drizzle of Wolfsmouth aesthetic".

‘We’ve always loved and been inspired by Mediterranean food and we thought that mixing up the influences from the coastline would give us more scope to play with our menu as well as combining unique dishes from a variety of places’, said Jack.

‘We think Brighton is lacking in a restaurant with the med. offer and we hope to fill that gap!’

With a lot of restaurants and chains going bust during the pandemic, some might say it’s a a risky time to open a restaurant. Indeed, med. were handed the keys to their new restaurant on the day lockdown started! But they didn’t sit around and wait for things to change, they readjusted their planned layout and made the whole restaurant ‘Covid friendly’ in terms of seating and table arrangements.

Jack continued: ‘med.’s opening menu includes dishes such as clams with vino verde and chorizo, market fish grilled over coal, Lebanese flatbread with baba ganoush and smoked mushrooms. We didn’t want to focus on just one area of the Mediterranean for our dishes, the influence stretches all the way from Egyptian, to Lebanese, Portuguese to Italian. The feedback from family and friends so far has been amazing and we can’t wait to open on the 30th!’
